I’m Niya, and I’m learning to cook properly.

Not “learning some recipes” — I could already follow a recipe. What I couldn’t do was explain why any of it worked. Why one batch of scrambled eggs comes out silky and the next comes out weeping in a puddle. Why my soups tasted like a list of ingredients instead of a dish. Why the same vinaigrette split in the jar on Tuesday and held all week on Thursday.

So this site is my working notebook. Every post is a real dinner, written up twice: once as a proper recipe card you can print and cook from, and once as an explanation of the technique underneath it — browning, deglazing, emulsions, poaching temperatures, seasoning in stages, cooking to a temperature instead of to a clock. Where I got something wrong first, I say so, because that’s usually the useful part.

What you’ll find here

From-scratch food, mostly for one working week at a time. A lot of it is meal prep, because that’s the reality of cooking around a job. A lot of it comes out of an Instant Pot or a single skillet for the same reason. None of it uses an ingredient I can’t buy locally.

Technique notes on every recipe. Practical ones in the recipe card, the longer “why” underneath it. If you only want dinner, the card is all you need.

Honest ratings. There’s a five-star rating on every recipe. Please use it, especially if something didn’t work — I’d rather know.

What you won’t find

Health claims. I’m a home cook working on my technique, not a nutritionist or a practitioner of anything. If a recipe happens to be good for you, lovely, but that’s not the reason it’s here. It’s here because it taught me something about cooking.
